Interview to the President of Heiwa Shuzo, Awarded with IWC2020 Champion Sake – Part 2――In addition to Champion Sake, you received Sake Brewer of the Year for the second consecutive year, entering many brands of your sake in the contest. It’s a great result.
◆ We always enter all of our sake for the relevant categories, which is just over 10 brands. One of the reasons why we do so is because we want to know the level of our sake in the world’s most prestigious competition IWC. Another reasons is to know the “standard” in the world-class competition. We have a belief that our sake brewing will contribute to the sake industry. It is important to know the global standard of good sake so that we can improve our sake without being self-satisfied.
――2020 was the year when the whole world was at the mercy of COVID-19. In spite of difficult circumstances, there were 1,401 entries of sake, and KID Muryozan stands at the top of them. What do you think of these?
◆ Whatever the circumstances, sake breweries’ desire to make good sake for people cannot be disturbed. I think the pleasure and values created from drinking delicious sake will not change. I guess 1,401 brands represent each brewery’s desire to make people savor sake they create. Heiwa Shuzo is making various challenges, with a continuous desire to expand the scope of sake business for the future. Our thoughts will not change. Because of this, our mission is to create and deliver good sake for the people. We are very honored to receive this award. At the same time, we are wondering how we can create better sake for the next time. How can we make people familiar with sake and enjoy it in everyday life? We would like to be committed to making these suggestions from various angles and train young brewers who will lead the future of sake. Now I am very excited to think about what we can do for the development of sake industry.
