• In 1583, Kami Yachiya Jinuemon had followed Lord Toshiie Maeda from Owari, west of Aichi Prefecture, to the current location of Kanazawa, and started brewing sake exclusively of Lord’s stipend. The trade name “Yachiya” and the brand name “Kagatsuru” for the signature sake was given to the brewery in 1628. As the sake brewer of Kaga domain for over 400 some years, the brewery has passed down the traditions of castle town Kanazawa’s local brew. We consider sake brewing starts from the rice making. So we mainly use sake rice produced by 14 contracted farmers within the territory of Japan Agricultural Co-operatives Kanazawa’s Mitani Yachiya branch, and we give importance to sake rice’s umami, and take most care to create for brewing our sake.
