One of the reasons would be that a growing number of bottle storage has been preferred rather than the traditional tank storage method. Actually, some breweries bottle sake earlier than ever before.
In the recent trend, sake storage warehouses are increasingly becoming giant refrigerators, mostly at the time of renovation. Some are located in such unusual places that people might get interested in sake just by thinking about the places.
Places relatively used for the storage are tunnels. The tunnel storage can be a natural refrigerator when both ends are sealed. The tunnels are those of abandoned roads and deserted railroads, dotted all over Japan. They have a really good atmosphere.
