Popularity of Sake Bottles Changing the World of Sake (Story about Quality)
Sake is mostly contained in glass bottles and paper packs, but until around 1900, casks were commonly used. Generally, sake stores procured sake to sell it by volume. They measured the volume of sake poured from a cask using a masu cup and sold it in a large porcelain carafe. Some of them may have cheated on the quantity, added water to increase the volume or labeled it as a different brand of sake, leading to consumer distrust. Another problem was that sake was easily deteriorated by exposure to air because it was poured from a wide mouth cask.When beverage in glass bottles started being introduced in Japan, glass bottles became so popular as to be reused, just like beer and wine bottles.. In 1886, sake in 4-go (720ml) bottles were released for export. In 1899, a sake brewery Eigashima Shuzo Co., Ltd. (Hyogo) released sake in a 1-sho (1.8 litter) glass bottle, which became a hot topic then. Soon after that, sake bottles were produced by a large manufacturing company and then 1-sho bottles were mass-produced by a glass manufacturing company. Eventually, since sake was packed in a standardized container as 1-sho bottles, sake glass bottles gained the trust of breweries and consumers as having quality and quantity assured.
