This sake is made from Yamadanishiki grown by contract farming in Noto, Kanazawa. It has a good balance of sweetness, acidity, astringency, bitterness and umami, and you can enjoy each taste in one sip. In 2014, Madrid Fusion, the world’s culinary summit, appreciated the “rice’s rich flavor” of Chikuha, which was served at the event.
