We’ve polished the brewing rice of Akita Sake Komachi up to the polishing rate of 35%, then brewed this Junmai Daiginjo with the yeast, which we produced ourselves. Amanoto is characteristic for its soft ginjoko - fragrance specific to ginjo, and delicate, graceful taste.
